Tea Sandwiches

Tea sandwiches tend to be pretty to start with, since they are usually cut in smaller dainty shapes and have the crusts removed.

You can give them an added touch of elegance by buttering the edges and dipping them into chopped dill, chives, parsley, or lavender.  If the filling is sweet, such as cream cheese with fruit, try dipping the edges in finely chopped nuts.

One of my favorite tea sandwiches is basil poached pear with gorgonzola on pumpernickel bread.  This is on the menu at the Grand Floridian, but I don’t have the recipe.  Here is a similar one from Recipe Zaar.  I also like the more traditional sandwiches such as cucumber, egg salad or smoked salmon.

I prefer to make salmon spread, instead of smoked salmon sandwiches.  It’s an easy and delicious recipe.  I have made this for several functions and a lot of people say they have never tried it and are only familiar with tuna salad.  If you haven’t tried this sandwich filling – here is the recipe.

1  (15 ½ oz) can red salmon (you can use pink, but the filling will not look as pretty) 
½ cup finely chopped celery
¼ cup finely chopped onion
¼ cup finely chopped parsley
1  tbsp fresh lemon juice
½ cup mayonnaise  (I use Miracle Whip light)
salt and pepper to taste.

Remove bones  from salmon if desired, and mash salmon with a fork.  Add celery, onion, parsley and lemon juice.  Mix well and fold in the mayonnaise.  Season with salt and pepper.   Makes 2 cups.  I like to use a layer  of wheat and a layer of white bread in each sandwich.

Tea sandwiches are my FAVORITE part of a tea party! Even more than scones, and that's saying a lot.

I agree with Steph, my favorites are the sandwiches. Your recipe looks yummy! My favorite is egg salad, chopped finely with a touch of chile paste. Oh I could just eat all of them.

I dearly love egg salad, but I had a smoked turkey with Gruyere, thinly sliced pear and cranberry mayo that was the best! Do I really have to choose?

Cucumber and cream cheese is my all time favorite, but I'm a traditionalist. For the holidays, cranberry and walnut tea bread makes nice, sandwich bread!

I love the recipe! Going to try it out this weekend :-)

Yum! I must agree with Steph. I love the sandwiches the most. But of all that I have had, I like chicken-curry with almonds and grapes. I know, it's plan & so common, but I just love them!
I do like pear, cream cheese & walnut with honey too.

Your tea party sandwiches look delish! I think a salmon spread sounds wonderful, too. My favorite is chicken curry, and I add dried cranberries at Christmas...I make lots of extra for my hubby to eat after a tea...my next favorite is egg salad, then cucumber and cream cheese spread thick...I always make all three because I can't choose!

Everything looks very good..I'll be right over!

All these sandwich suggestions are making me hungry! And I guess this is kind of like the person whose favorite flavor of ice cream is vanilla, but my favorite tea sandwich is plain old cucumber (the crisper, the better) on cream cheese and white bread. I like the sound of your salmon spread and will have to give this a try. And I'm glad to hear you like that book, "Tastefully Small." I've seen that on some websites and wondered if it was worth a try, so thanks for the recommendation!

My favourite tea sandwich, is without doubt, cucumber on butter with a light dash of salt. Oh, some water cress added can be very nice too.
