Madeleines

Nothing complements a nice cup of tea like a warm and fragrant madeleine cake. They are not too sweet and have a lovely delicate texture.

Madeleines

2/3 cup superfine sugar
3 eggs
1 egg yolk
Juice of ½ lemon
Pinch of salt
1¼ cups all-purpose flour, sifted
½ cup (1 stick) butter, melted

- preheat oven to 350 degrees and butter 24 madeleine molds
- in medium bowl beat the sugar, whole eggs, egg yolk, lemon juice and salt at low speed till well blended
- fold in the flour
- slowly add the melted butter and stir to blend
- spoon the batter into the molds, filling no more than 2/3 full
- bake the cakes for 20-25 minutes or until just golden
- unmold and cool on wire racks
- sprinkle with icing sugar

I love Madelines...made my first batch of them for a tea last summer, and dipped them in chocolate. They are so elegant and light...perfect for any occasion, but especially for tea. Thanks so much for the recipe...I'll try it tomorrow!

I was just in a Starbucks yesterday and saw some madeleines for sale and thought "Hmm, I think I'd like to make some of these soon." Yours look divine!

You know what? I've never made or even tasted a Madeline to my recollection. They certainly are delicious looking. I've been meaning to try them....one day when time allows. Thanks for the recipe though.
