Madeleines

Nothing complements a nice cup of tea like a warm and fragrant madeleine cake. They are not too sweet and have a lovely delicate texture.

Madeleines

2/3 cup superfine sugar
3 eggs
1 egg yolk
Juice of ½ lemon
Pinch of salt
1¼ cups all-purpose flour, sifted
½ cup (1 stick) butter, melted

- preheat oven to 350 degrees and butter 24 madeleine molds
- in medium bowl beat the sugar, whole eggs, egg yolk, lemon juice and salt at low speed till well blended
- fold in the flour
- slowly add the melted butter and stir to blend
- spoon the batter into the molds, filling no more than 2/3 full
- bake the cakes for 20-25 minutes or until just golden
- unmold and cool on wire racks
- sprinkle with icing sugar

  3. I love Madelines...made my first batch of them for a tea last summer, and dipped them in chocolate. They are so elegant and light...perfect for any occasion, but especially for tea. Thanks so much for the recipe...I'll try it tomorrow!

  4. I was just in a Starbucks yesterday and saw some madeleines for sale and thought "Hmm, I think I'd like to make some of these soon." Yours look divine!

  6. You know what? I've never made or even tasted a Madeline to my recollection. They certainly are delicious looking. I've been meaning to try them....one day when time allows. Thanks for the recipe though.
